a change...?

well...

i know i barely got this blogging thing off the ground, but i think i need to change my goal.

i think only blogging about wedding planning was a limit to me...and i have had other thoughts and writings i would have liked to "get out there" but felt they didn't match my theme.

i will stick with the name...because even after march 12, i will always be andy's bride! and always an ever mood changing one at that! but it may just be more of a "life event" blog. i am too crazy and my mind is too everywhere to stick to one topic!

i didn't think anyone really read my blog because i have 3 followers (one of them myself, lol) but i have heard that others have looked for more blogs. they will come...promise!
:O)

just allow me to write my poignant blogs sort through my insane thoughts...and edit my logo.
:O)

happy new year all!

Chocolate Mint Candy Cookies Recipe

Here is a recipe that my picky, no taste dear fiance doesn't like...but I have used at a couple cookie exchange parties this Christmas! Enjoy!!

Ingredients

  • 1 cup and 2 tablespoons butter
  • 2-1/4 cups brown sugar
  • 3 tablespoons water
  • 3 cups semisweet chocolate chips
  • 3 eggs
  • 3-3/4 cups all-purpose flour
  • 1-3/4 teaspoons baking soda
  • 3/4 teaspoon salt
  • 4-1/2 (4.5 ounce) packages chocolate covered thin mints

Directions

  1. In a saucepan over medium heat, cook the sugar, butter and water, stirring occasionally until melted. Remove from heat, stir in the chocolate chips until melted and set aside to cool for 10 minutes.
  2. Pour the chocolate mixture into a large bowl, and beat in the eggs, one at a time. Combine the flour, baking soda and salt, stir into the chocolate mixture. Cover and refrigerate dough for at least 1 hour.
  3. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll cookie dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets.
  4. Bake for 8 to 10 minutes in the preheated oven, be careful not to overbake. When cookies come out of the oven, Press one mint wafer into the top of each cookie and let sit for 1 minute. When the mint is softened, swirl with the back of a spoon or toothpick to make a pattern with the green filling of the mint wafer. For smaller cookies, break mints in half.

who would've thought...

my love and i decided to start working on our registry for our shower. i was so excited...and i think he was too!

i found out recently that andy loves bed, bath, & beyond almost as much as i do...after having to corral him out the store one night when i was in search for the perfect pillow...and thought he was right behind me as i continued on my way out the door...only to turn around and not see him in the parking lot with me.

oh, no...he was still inside...in the stroller section. really, andy? the strollers?!? apparently...they are really cool. (we aren't in need of a stroller, for the record!)

anyway, the lovely registry coordinator gave us each a gun and explained to us their incentive program. things like...register for $500 worth of calphalon products and get a free knife. even if not a penny of it is purchased. not a bad deal...and andy was ridiculously overly excited to get a knife. for free.

which led him to scan the first calphalon set we see. for $700.00

you read that right, folks. seven hundred. he was being irresponsible exuberant about meeting that $500...but it wasn't the set i wanted. not to mention i wouldn't register for a $700 anything!

from there i was told i was right taking it too seriously...and that he was trying to be stupid fun.

which i, of course, interpret as him telling me i am not fun.

the fight which ensued led to tears (from me...not him), raised voices, and a bed, bath, & beyond worker mediating our squabble.
**note: as per the wise woman who settled our argument...whoever is doing the cooking and the baking gets the final say!

we were on our first item. there went my idea that registering was going to be a wonderful experience!

although, we did come to an understanding and ended up having a better time...thanks to our ability to behave and resolve misunderstandings like adults my new found friend, oh wise store worker!

bottom line...there is not really one part of the wedding that isn't stressful. but try your best to enjoy the process. and don't let silly things ruin this once in a lifetime adventure! and learn to listen to and respect each other.

also...if your groom isn't real big into the wedding planning (as mine isn't) then when he does show an interest...make him think let him know that you value his opinion...and come to a decision together.

and to avoid as much drama as possible...remind any engaged man you meet that she is always right.

the gleeful groom......?

i have asked my sweet, understanding, compliant fiance for one thing in the wedding planning process thus far. one thing.

our rare weekly discussions arguments have evolved like this...

"oh fiance! have you asked your friends to be in the wedding yet?

"honey...would you please ask your groomsmen to be in our wedding?"

"andy...did you do what i asked you to yet? the one thing i have asked you to do for our wedding?"

"hey! you have until this weekend to ask your guys or i'm gonna ask them for you!"

"baaaaaaaaabe...i need to get my girls in to order their dresses...like now. i really need you to ask..."

and then last night:
"may God rest your soul if you do not ask your guys to be in the wedding. there may not even be a wedding!
why must you torment me?
do you have cold feet?
have you changed your mind about marrying me?
why won't you do this?
i will punch you in the face if this is not done this week!
(and the kicker)
i can foresee a
lot of headaches in my (our) future."

he's going to ask them this weekend...
